New post... sorry I haven't been.

Hey there everyone. I'm sorry I haven't been posting. I've been busy. If you want to hear what's been up you can check out my other blog (www.victoiranchic.onsugar.com).  My life has pretty much been the same since my last post about my Nan. I've moved in with my boyfriend downtown. I've started working full time at a call center for American Express. I have pretty much no life outside of my house, the internet and work (though I guess pretty much everyone is like that eh). If I wanted to, I could write a big long post about how much my roommate drives me crazy, what my boyfriend has been up to, what bothers me about work, how tonight I got to see my friends for the first time in a long time, and how I've been trying to lose weight. But here's the short version:

My roommate is a jerk. My house is small and I put up with his crap even though I don't have to.
I have a dog, her name is Milly and I'm pretty sure I'm going to have to get rid of her because my boyfriend wants to pay strippers instead of her vet bills.
My boyfriend is amazing, but since he's a man he doesn't think before he does things, so I'm currently pissed at him.
American Express card members drive me crazy, do me a favor and give your credit card company a break, you got an overlimit fee because you went over your limit, yes the interest charges are correct we don't care if you were away on vacation, we didn't receive your payment, therefore you got charged interest, yes dumbass it did effect your credit bureau score, no I can't fix it for you, yes I could remove the interest, but I don't want to because you're demanding.
I went out tonight with my friends, at first is was supposed to be just my friends, then it turned into my friends and my bf, then just before we went out it turned into my friends, my boyfriend, and his friends, which means I spent more money than I planned on spending and now I'm alone because my boyfriend went to the bar.
Yes, I'm trying to lose weight, and I'm doing very well, I've lost 8 lbs so far and every time I step on the scale the number is lower. GO ME.

But now, I'm going to try to relax, and possibly dig into my boyfriend's booze.

Sorry!

I'm so sorry everyone, for not writing, I've been so busy lately.

First and foremost, about a week and a half ago, I stubbed my toe on my uncle's coffee table, and what I thought was a broken toe that was bleeding, was infact a broken toenail, which is now a hanging-on-by-the-skin-around-it toenail (in other words, my toenail is now hallow... hollow? Either way, it's gross, but at the same time, very interesting, I can't seem to take my eyes off it).

Monday I started the training for my new job (which is pointless and boring, but at least it's easy and I get weekends off). I can't even begin to tell you how incredibly annoyingly STUPID the training is... actually, I can't tell you much of anything, since I signed a confidentaility agreement. The basics are... I work for American Express as one of the agents you get when you call the number on the back of the card. I could tell you a lot about American Express (the cards, the insurances, the benifits, the uselessness of it all) but I can't get you discounts, or tell you much else about my job. (By the way, anyone who's signing up for a American Express Costco Rebate Card, be sure to READ the entire agreement before signing it, if you don't want your membership put on your American Express card, check the box that says so, and know that's it's a rebate of UP to 2%.... usually the rebate cheque is correct, sorry.

After a long first week at work (which is in the same building my Dad works at *YAY!*) I got off and went camping for the weekend. For anyone who knows me, that involved a lot of time on the beach, doing pretty much nothing since running/tubing/biking/physical activity is not on the list of things I can do at the moment, though I am improving. I can now walk up and (sometimes) down stairs, walk to and from macs, without my knee hurting. I've been exercising (even if it is only walking and doing situps/push-ups/physio) but not as much as I'd like to... hopefully this week I'll keep better track of things.

I'm moving out of my house, and in with my uncle with my boyfriend. Things aren't really working out for him, and my uncle needs someone to be there with his son through out the night, and I can't do that if I'm working till 3 in the morning (starting in september). Hopefully that'll work out.

I hope to keep on top of things here and on my other blog, as well as with everything else that's going on in my life. :)

Failure to Follow the Book

So as I mentioned in a previous post, I wanted to blog about every recipe in this book called "The Golden Book Of Baking". Well, so far, I've failed, I've only made two recipes, and that was about a month ago. I will try to make in upcoming weeks, but can't make any promises as I will be busy with work, and probably won't have the money to buy special ingredients for recipes. But I will try.

Alright, so Now You're Going to Complain?

After days of asking her to come get her table, she comes and gets it, and at the same time she takes her whiteboard with her. What do you do? Call her vindictive, and names that I will not repeat on this blog. Good for you, you're mature. It's her stuff, stop bitching, and get new stuff. By the way, she's coming back to get ler lawn chairs, just thought you should know. Oh, and by the way, does she have a reason to NOT be vindictive? You screwed your new slutty girlfriend while you were with her, I think she has a very good reason be be vindictive. I certainly would be if I were in her shoes. Just be lucky she didn't take that wonderful bbq she got you. Dumbass.

Incredibly Awesome Night

Tonight I spent an amazing night dancing away, and drinking with friends. My dear friend Cassy was there (no, I'm not referring to myself, I really do have a good friend named Cassy), and we helped her party all night long. I'm am now feeling just a little bit shitting, and quite frankly would like to go to bed.... but I don't want to go out to the tent alone. I will stay right here and relax, hanging out with my hunny and his dad.

Letter to the Asshole who Broke my Friends Heart

Why Hello Mr. I-didn't-have-the-balls-to-break-up-with-my-girlfriend-so-I-screwed-someone-else. I hope you have a nice life with that new, fat, ugly, bitch of a girlfriend. I hope you love her too (like you ever loved her), and I hope you decide that you'd like to marry her as well (good luck finding that engagement ring you bought for $200 for my friend).

You're an asshole. Treat her like shit for the past couple months, pulling her along. All she ever wanted was to make you happy, and you threw her sunshine and rainbows back her face, replaced with lighting storms and hail. You make me sick. When she called to come over the LEAST you could have done was say "Listen, I have a girl over here, and I think we have something, I don't think we're going to work out..." Instead, you lied, then when we came over, you said "are you spying on me?". Did we have a reason not to? Nope. Then when she found out, you laughed, and said "Oh, did you think I thought you wern't going to find out?". I really hope, for your sake that you were trying to hide it, and if that was your way of trying to get HER to break up with you, I hope someone comes up to your and rips off your manlihood, you don't deserve it anyways.

Have a really, really, nice life, I wish they keep you in the army, and make you work like a slave the rest of your life.

Some Things I'll Miss About My Nanny....

1. Brown Sugar Sandwiches
2. The back rubs, the ones she did with just her fingernails, no one can back-rub like her, she'd do it for hours on end while we watched a movie or a tv show, or she's rub me to sleep.
3. Sleeping over at her house and going to church the next day.
4. The smell of her old apartment by KFC.
5. Her big comfy bed.
6. Waking up and being forced to wash my face and get the "sleep" out of the corners of my eyes.
7. Waking up and getting oatmeal with lots of milk and brown sugar after washing my face.
8. The cherry tomatoes she grew on her balcony, I'd pick them off all the time.
9. Her man-chasing.
10. Her complaining about having her car, and her phone, and her tv taken away from her.
11. Yard sales... they were few and far between, but every once and a while we'd go.
12. Doing laundry and hanging out with all the ladies at the apartments.

Some memories:

That time Steph and I both slept over at ther apartment and the fire alarm went off, we all went outside in our nighties.

The day she left me in the car on one of the hottest days of the year and I got dehydrated, I slept all day and she felt so bad.

Watching Benny Hinn and other religious shows on Sunday morning, before we went to church.

Picking blackberries.

Staying there around Christmas, going to see the singing christmas tree and her itty bitty tree.

Walking on the boardwalk, and getting ice cream.

Return of the Computer

After a week or two of being completely computer-less, my grandmother gave me $100 for my graduation, and I ran to Wal-Mart and bought a universal laptop cord, now it works! At least I know there was something wrong with the cord, not my laptop. Now I can start my youtube channel (yay me! just have to get started with actually making the videos), and keep up with both my blogs more easily.

This is probably going to be my most depressing blog post ever, but I figure I should let everyone out there know what's going on. Last week my Nanny had a mini stroke and fell and broke her hip. For anyone who isn't caught up, my Nanny has a terminal form of cancer, Altzhiemers, and dementia. She isn't exactly the healthiest person in the world. Since her cancer is terminal it is too much of a risk to go for surgery and fix/replace her hip. Since then my parents, aunts and uncle have been taking turns spending every moment with her, she's never left alone. She's been getting progressively worse. She refuses to drink anything, and will only eat small meals and ice cream. Her mind is progressively getting younger, now I'd say she's probably around the mind-set of a three year old. However, anything to do with religion, and she's all for it, she'll listen to the pastor, and sing church songs with my mom. Funny how religion is so strong.

She's been in a lot of pain the past couple hours, and we don't think she's going to make it much longer.
Allthough I love her to death, I havn't gone to see her. I visited both my grandfathers in the hospital before they died, and I hate remembering them like that, and I don't want to remember her like that, it's bad enough that I have to remember her the way she was at my graduation. She was moved to pallative care yesterday.

Oh the Wonderful World of Relationships

Modern society is funny, it's like relationships don't mean anything anymore. There's a high divorce rate, people are cheating on eachother left right and centre, we don't seem to care about committment anymore. Those out there who are happy in their relationships are lucky, and work hard at it. Children are dating, young girls and boys are losing their virginity at ages as young as 13. Those three words "I love you" have no meaning behind them, they're words thrown out there to say you like someone, or you care about them. They're words used to get someone into bed, or get something that you want. People had it right in the old days (no, I don't mean 1960's) back when you courted for a long time before you got married, and when you did, he asked your father first, and he got down on one knee and asked you, he didn't propose over dinner by putting the ring in your dessert, he didn't propose on tv, and he didn't propose over a screen at a hockey or baseball game. Weddings were simple, yet extravagant, these days they're something to stress over and could put a lot of pressure on the relationship.

Love isn't something to be played around with, it's not a word that should be thrown around lightly, just like hate. When you love someone you care about them so deeply that if they were to go away, you would always be in love with them you couldn't be in another relationship three weeks later, you would have a hard time getting into a new relationship because that person is always on your mind. It doesn't happen in a couple days, or a couple weeks, and it certainly doesn't happen overnight. Love needs time to develop, it needs care, and trust. Love needs respect and it needs time. So many people tell me my boyfriend is an asshole because he doesn't love me, but I don't love him either, we care about eachother a lot, we take care of eachother, and can have long conversations about everything under the sun.

Our relationship isn't easy, and sometimes I wonder why I'm even bothering, but then I realize it's because he's special, he's the only person who isn't related to me to call me beautiful, he's the one person who makes me feel good every day, he makes me want to accomplish all my goals, and makes me want to enjoy life to the fullest. He'll do little things to make me feel like I am the best girlfriend in the world, and unlike many boyfriends out there, he never, ever, complains about me, even a little bit, because if he has a problem that we need to work out, he can talk to me about it. We realize that our relationship isn't going to last forever, but we want to make the most of every moment we have together. I know so many girls who have gone through so many boyfriends, and they've probably never had what we have, something that isn't rushed, and taken day by day. They've probably also never had to go through some of the things I've gone through with him, but that's ok, I don't mind going through these things, because when we finally work it out, it was worth it, I've learned so much, and so has he.

So weather you're 13 and going on your first date, or your 60 and happily married, try harder to understand the other person, try harder to make sure you're in love before you say it, and think about your relationship a little more often, because chanses are, if you're 13 and you think you're in love, you're not.

CUPCAKES

So, it's been a busy week. Monday I graduated grade 12... GO ME! Tuesday was my prom, it was really fun and Unca Mike took some awesome pictures. Thanks! Wednesday was my first physio appt, they gave me 2 exercises to do, and want me to ice my knee several times a day. They took away my brace, and told me I shouldn't sleep with it on... bright side, I can drive now. I also have a brand new car, a Hyundai Accent 2001.

Anyways, for my graduation, Unca Mike and Peggy got me a handy dandy very large cake decorating set, his sons and their mother got me a beautiful silver necklace, it's a heart-shaped key. My aunts and grandmother gave me money, and my aunt on my moms side bought me a golden baking book.

Now, I don't want to copy Julie and Julia or anything but I plan on making every recipe in that book, and telling you about it. I love the idea of trying to make every single one of the recipes. I've already made 2, Party cupcakes, and the Red Velvet Cake  recipe, which I turned into cupcakes. Both of which turned out very well. Everyone enjoyed them very much, including me, and I've managed to barely eat any. :)

For now, I'm back at my uncle dars, which is unfortunate, because I don't like being there, but it keeps me in town, and is a lot cheaper on gas. I'm applying for another job at the local grocery store in the bakery, hopefully I get it and I don't have to work at OLS. I also hope that it's a full time job, not part time. I don't really want to work at OLS, but it's the only place here that will offer someone my age full time work with benefits, that's over minimum wage. I'm torn.

Spaghetti :)

So yesterday I had the best spaghetti I've had in a long time. It was sweet, and delicious. It consisted of 2 cans of thick and rich spaghetti sauce, 2 cans of tomato soup, 2 tablespoons of italian seasoning, a big scoop of brown sugar, some green peppers, some crushed chili peppers, some mushrooms and some warshestire (spelling) sauce. All thrown in a slow-cooker and cooked all day. When all was said and done, I was very happy, until I ended up getting sick later that evening. I don't know what's wrong with me, but when I eat a bit meal lately I get sick. It's strange.

Did I mention I made a terrible batch of cookies the other day? I was working on my baking project and I threw all the ingredients in the bowl and mixed them by hand. They were very crunchy (read: hard), and not very good at all. Lesson learned: follow the directions, or you get icky cookies.

Oh the Wonderful World of Injuries

So it's been about a month since I dislocated my patella. YAY. I'm still in the leg brace, and not really enjoying it, however, I do have one calf of steel! Next week is a busy week, and I plan on trying to walk before then. I have graduation on Monday, prom on Tuesday and my first Physiotherapy appointment on Wednesday. After talking to an orthopedic surgeon at Cheo I found out I need 6 weeks of physio, followed up by another appointment, if the physio doesn't seem to be helping, I will need surgery, on both legs, either to shorten my tibia, or to shorten the legament that holds my patella in place.

There's nothing more fun than hurting yourself.

On a brighter note, I have a full time job (almost) I have to go get my criminal record check tomorrow, but after that I will be starting at a call centre on June 26th. Until then, I have no money, unless Uncle Dar is going to pay me for babysitting his kid.....

I never fail to surprise myself though. After about a week of complaining that I couldn't walk around as much as I'd like, I said "Screw it" and walked around all I wanted. So, I baked. Oh boy did I bake. Right up to the point where my teachers decided even though I had a doctors note to stay home, I still needed to do all the assignments that were given. So I had to do a tape sculpture, a portfolio, a three minute long stop-motion video, a three minute long commercial, design a website, plan a business for my baking class, and write my written exam for baking class. This was all in the span of about.... two weeks. What proves that I am absolutely amazing, I finished them all. Early. Therefore, I am officially finished high school for the remainder of my life, and I am enjoying every minute of it!

Yes, Dr. Hing is still there, and he's still an asshole.

So, I'm sorry I don't get on here very often, it's sad really, because I would love to communicate my accomplishments and tips and stories with the world, but dialup sucks. So we're just going to have to deal with what we have.

I'm going to be kind of out of commission for a while in the baking world. Unfortunately I dislocated my knee last Tuesday (Boo Hoo). So here's the story:

Tuesday I was on a trip to Ottawa with my school, which my cousin was also on. It was SO hot out that day we had this brilliant idea to come back to my place and go for a swim. At first I figrued we'd drive to his place then drive my car back home, then I changed my mind and told him to bring his jeep because we could then go to a set of waterfalls that are behind my house (first mistake).

So when we got back to school I threw all my stuff in my boiling car and picked up my sister from my uncles house, at which point we went home and thought "hmm, going all the way back to the falls would be nice, but we have a pool right in front of us, lets just swim there." Then my little cousins showed up. As much as I love them, and I love swimming, I don't exactly love swimming with them.... So climbed into the back of Mitchell's loud, bumpy jeep (cuz Becca had to have the front seat, which by the way is terribly difficult to get in and out of because the seats don't move enough and you have to climb around things) (did I mention it's a two-door?) and headed back on Colby Lk Rd to the falls (second mistake).

The falls were great, we went swimming, but then the bugs got bad so we thought it was time to go home. Becca still insisted that I sit in the back, so I didn't argue (third mistake). We followed the bumpy trail back to the house, where we parked in the back by the pool (thank god). Mitchell and Becca both got out of the Jeep no problem, I on the other hand was a different story. Rebecca closed her door, so I leaned into the front seat to open it. Stepped between the two front seats, and in front of the passenger seat, put my foot down, shifted my weight onto my right foot and...... POP.

My leg buckled out from underneath me. Looking down at the oddly-shaped somewhat-there kneecap the only thing I could think to do though the pain and trying to get the pressure off my foot was SCREAM. And I screamed, oh boy did I scream. Mom instinctively came running (her motherly instincts kicked in, she new that wasn't the scream of a bug bite...) Dad just said "what the hell happened now?" On their way over to see what happened I yelled at them "Mom, Dad, I dislocated my knee." Well that started the running, Dad automatically tried to move me out of the Jeep, with Mom yelling at him "Do. Not. Move. Her." Him and Mitchell both lifted me up a little so I could at least sit in the front seat, rather than stand half way between the back and front.

Mom called the ambulance and told aunt Elise to guide them down the back entry. So here's me, trying to look around, but everythings purple, I'm sweating, crying, shaking and blacking out. Becca got me a glass of water and ice, which I drank and took the ice and rubbed it all over my face, trying to get my sight back. After what seemed like eternity the ambulance arrived. This is where it got super fun.

Trying to get me out of the Jeep was a trick and a half... not only would I not let anyone touch me, moving myself was just plain painful. So they stuck that blue board thing with a sheet over it under my ass and said "Cassy, if you could just get your legs out of the Jeep, that'd be great, then we could slide you onto the stretcher." Now, saying that is one thing, doing it is something else entirely. If you've ever dislocated your patella, you'd know that it is one of the single most painful things in the world, if you havn't, well, let me put it this way, if you could imagine taking your bare bone, and sliding it accross pavement, that was kind of what it was like, except, it was that kind of pain with every single movement I made. Needless to say, I didn't want to move.

Eventually I got onto the stretcher, and into the ambulance. Joining me in the ambulance was mom (she sat in the front) while two other paramedics sat with me and watched my blood pressure, and heartbeat. (I still have an X on my foot marking where you can find my pulse.) The ride was a bumpy one, which wasn't exactly fun. Pembroke roads were not made for ambulances. After that moving me was fairly easy, they brought me into the hospital room and put a slippery white board underneath me (hahaha, ya, I lied, moving me from the stretcher to the board hurt....), and just slid the board everywhere that I needed to go.

It was forever until someone came to give me drugs, the drug of choice...... Demerol, just so you know Demerol sucks. All that it does is make you EXTRA sleepy.... it does absolutely nothing for the pain. They gave that to me so I would happily go into X-ray.... The first thing I said to the very nice X-ray technician? "Don't move my leg." So I gave him a hard time, I think he forgave me though, cuz I was in a LOT of pain. He didn't move me, he took the X-rays from angles that involved not moving my leg... which was hard, but he did it. (By the way, my leg was bent on just a little more than a 90 degree angle)

After the X-rays it seemed like forever before I saw the Doctor. He told me they were going to give me a drug that would take away the pain and make me really really tired. Which they did, but not before screwing up the I.V. The drugs were JUST beginning to kick in when Dr. Hing walked in and said "Alrighty, so we're going to just touch it...." And the screaming began, I did not want him touching my leg, but he did anyway, and the screaming proceeded, but only until it put it back in place and I passed out. A few minutes later I woke up to my father beside me, and James stroking my head. (In between that, I sort of felt the X-ray technician taking another X-ray with a portable machine (by the way, why couldn't we use that the first time?) and boards being placed under my leg.

So I'm in a leg brace for a month (YAY) and will soon be going to see my Family Doctor, who will hopefully send me to an orthopedist or some other specialist who will FINALLY be able to tell me what the heck is up with my knees, because this is just plain rediculous, knee pain all these years and doctors don't believe it's that bad.

Mom and Dad are getting me a pool membership for my graduation present now, since I can't do any hard-core exercise but need to keep my weight under control in order to keep this from happening again. Grad will probably be an absolute blast with this thing on my leg, as well as Prom, but what can you do?

So today in Baking class we had a special guest. A cake decorator from a local bakery came in and tought us how to decorate cakes. I already knew a lot of the stuff he showed us, but learned a lot too! :D

I'm not quite sure what i'm going to do for my first cake, but I already have the second one finished. It was a small plain white cake, with pink and yellow flowers on top to the side. It read "Happy Birthday Cassy" (just to practice the writing). It didn't turn out as well as his, but I still love it. The cake is a little dry (to be honest that's kinda the way I like them....) but other than that, it turned out great. Tomorrow I finish my first cake... what to do what to do, I have to let my creativity explode on this one, while still making it sweet and simple.

Sorry... :(

The downside to dialup internet is...... oh god, who am I kidding? There is nothing but downsides.
I never go on the internet anymore, check my emails from my phone, check facebook from my phone, and anything else I do when I'm in town at our local cafe with wi-fi.

Sadly this hasn't been updated for a while.

I got my first job making a cake for a co-worker. She asked me to make a princess cake for her stepdaughters sixth birthday. It was vanilla with rasperry-lemon filling. I decorated it with pink fondant, a nice sparkly pink bow, edible silver balls, a brown ribbon around the cake, a tiara and a string of pearls. Big letters spelling out the words "Bonne Fete!" cleaned up the cake really well.

It wasn't the best cake I could have possibly made, but I was proud of it, and they all loved it. They ended up bringing it to Boston Pizza and a lady there loved it so much she asked for my phone number for cakes she needs in the future.

Later in the week I was asked to do a wedding cake for a friend of mine next spring. (Still not quite sure about this one, I want it to look professional, if I have enough experience I'll definately do it!)

This month I have 2 cakes to make. One for my grandfathers "funeral" (we're doing a celebration of his life rather than a funeral), and one for my co-workers birthday. Next month I have yet another cake to do for my Aunts birthday. OH THE CAKE MANIA! I can't complain though, because I love it!

I'll eventually post pictures with all of these wonderful cakes on the website, but for now you'll have to suffer with a discription. :D

Apple Caramel Cupcakes

Great success everyone! A few nights ago I made Apple Caramel Cupcakes, not only were they a challenge, they were delicious (though James didn't like them, I have no idea why). They turned out awesome, even though I burned the caramel the first time around.

Try number two for the caramel turned out much better, and I managed to make cute little caramel swirls to stick in the cupcakes.

Today I also went out and bought some new supplies for cake decorating, not much, but enough. Also some things I'm going to need to start a "business" (not an official business, but something on the side)

If anyone is looking for a cake for a birthday or some other party, I'm looking for people to make cakes for :D

Lost wallet? Washed it again? What to do!

Have you ever lost something out of your wallet, but you can't figure out what it was? Washed a pair of jeans and left your wallet in them? This blog post is for you!

This came from a very special person in my life, my godfather, he suggested it as a gender-neutral post, since a lot of my posts are directed towards women. This is what he does himself.

Take all the contents out of your wallet, not money, but cards, and important stuff like that. Place it on your scanner. Scan all the contents front and back. This ensures that if you lose anything, you'll know exactly what it is, because all you have to do is look at a file on your computer, or a picture (I'd suggest you print the picture, since computers aren't very safe privacy-wise, but you can put a picture in a folder in a locked filing cabinet). Banana Toffee Cupcakes Anyone?

The Date is Thursday March 26th, and I'm in the mood to make some cupcakes, so what do I do? I grab my handy dandy cupcake book and bake up a storm. This rounds challenge? Banana and Toffee.

Apparently for these cupcakes, a really ripe banana that's still slightly green produces the best flavour, however, I used a soft brown banana, so I couldn't tell you, perhaps later I'll try it the other way.

This makes 12 standard-size cupcakes.

You need:

A 12-hole bun tray lined with paper cases

For The Cupcakes:
3.5 oz butter, softened
3.5 oz light soft brown sugar
2 medium eggs
3.5 oz self-raising flour (if you don't use self-raising, your cupcakes will not rise since there is no baking soda/powder in the recipe.... you can buy it at the grocery store, it is NOT all purpose flour, I found this out the hard way)
1 banana, mashed

For The Topping:
3.5 oz butter
4.5 oz condensed milk
2 oz caster sugar
1 tbsp golden syrup

chocolate sprinkles

Directions
1. Preheat the oven to 375 degrees F, 190 degrees C, or 5 on gas.

2. To make the cupcakes, beat the butter and sugar together in a bowl until the mixture is light and fluffy. Add the eggs and flour to the bowl. Beat until the mixture is smooth, then fold in the mashed banana. Divide the mixture between the paper cases and bake in the centre of the oven for 12 to 15 mins until the cakes have risen and are just firm to the touch in the centre. Remove the cakes from the oven and transfer them to a wire rack to cool.

3. Meanwhile for the topping, Place the butter in a large microwavable bowl and melt it for about 30 to 40 seconds. Stir in the condensed milk, sugar, and golden syrup. Cook the topping in the microwave for 4 to 7 minutes on high power, stirring at the end of every minute (be sure to do this since it will boil over and there will most likely be a very large, sticky, hot mess) until it is a pale golden colour. It can also be cooked in a saucepan for 4 to 7 minutes stirring constantly so it does not stick to the bottom of the pan.

4. Leave the topping to cool and thicken slightly, then spread over the cooled cupcakes.

5. Top with chocolate sprinkles.

* Note, if these are for yourself, any colour of cupcake liner will work, but for parties, use decorative liners, they add a burst of creativity to the cupcake!

March Into Spring!

Okay, now that it's March and spring is starting to pop out at us around every corner, it's time to do some spring cleaning of your makeup bag.

Do an inventory and throw out old things. Toss out foundations, concealers, and lipsticks that are over a year old, mascara that's more than four months old, and anything that looks or smells strange.

Get organized! Collect the beauty basics:

This month, treat yourself to a massage, from a friend or a pro, it will help reinvigorate you - and loosen up your back muscles.

Tip of the day:
Now that spring has sprung and summer is right around the corner it's time to buy yourself a new bottle of sunscreen. But wait! Don't throw out that old bottle, you can use it as a shaving lotion to protect yourself from razor burn!

Going out and re-vamping your look for spring? Need some new colours? Bright bold colours are VERY in right now. Try bright teals, hot pinks, lime green, deep purple, yellow with pink undertones, and deep cheerful blues!

Don't forget... clean out old makeup, it can harvest harmful bacterias that you don't need on your skin, going out to buy new makeup is worth it.

Congratulations to Cassy and Camila!

Why congratulate me you say?

March 2nd, me and my friend Camila started making a cake, a cake of such epic proportions that even we didn't think we could do it. Everything started out great, during my spare and during lunch we laboured over this cake. What's so hard about decorating a cake? Well, this was no ordinary cake, this cake was in the shape of a cheeseburger. So we got to work cutting out pieces of icing into all kinds of shapes (cheese, pickels, tomatoes, onions).

After the first night we ran into our first problem... we didn't fondant (icing) the bottom piece of cake, the bottom bun, so it didn't match the top, and our fondant for the cheese and add-ons had started to melt!
"Don't worry Cassy!" said Camila, "The cheese looks so real now!"
And it did, I didn't realize at first, but this "disaster" had turned out rather well, our cheese had actually melted. So we got back to work, putting fondant on the bottom piece of cake.

On the 6th we entered our cake in the contest (not to mention this was Camila's birthday) my mom, my boyfriend and I all made a trip to the small town of Westmeath and waited for our name to be announced. Little did we know the actual prize ceremony wouldn't be taking place until 8:00 that night. We found that out and hightailed it out of there.

Later that night Camila sent me a text "Cassy! We won! We won the contest!"

All in all, I entered my first cake decorating contest and won! Not many people can say that. :D

How to Survive a Terrible Day

Everyone has 'em, those days that you know are just going to be terrible. Maybe it's a specific day, Monday, Wednesday... whichever.

Wake up and think "Today's going to be a good day" will yourself to think it's going to be a good day.

Start it off awesome, wake up early and make yourself a nice breakfast... this will automatically make the day that much better.

Make this the one day you allow yourself time for lunch (and buy your lunch).

Treat yourself to something new on this specific day.

Put something on your desk at work, or in your locker at school in the morning that will instantly brighten your day, or something on your desktop on your computer.

All in all, just put effort into making a terrible day a great one.

15 things Everyone Should Learn Before They Move Out

Lets face it, a lot of people out there just aren't prepared for facing the big bad world on their own. Sometimes it's as bad as not knowing how to do the dishes. Here's my challenge to all of those who are still living at home, learn:

How to Clean... Properly - it's sad how many people clean a bathroom by simply wetting a cloth and going over the counter, use cleaning products, use a rag for counter, and a scrubbie for anything that won't come up with a simple wipe. And no, not all cleaning products are universal, make sure you read the label so you don't ruin anything.

How to Cook - doesn't sound hard does it? I'm still trying to get used to it. My tip... learn how to cook 2 things for every meal, and possibly 2 desserts of some kind, then build on that. It's so much more impressive to guests if you can cook them something when they're over, or have a plate of cookies on the counter.

How to Do Dishes - it ties in the cleaning, but dishes is a biggie... so many people will let them pile up for so long, then wonder why it's so hard to get the food off of them. When cooking, clean up as you go, you won't have a pile to do when you're done. Fill each side of your sink, one side with very warm soapy water, and the other with very warm water. Why warm (or hot)? Because if you set cold dishes out to dry, it'll take longer. Scrub the dishes with a rag (or scrub pad) in the soapy water until it's clean, rinse in the other water and leave to dry (or dry with a towel). Anything that has stuck on food, let sit in very hot soapy water to loosen the food.

How to Do Laundry - in my cooking classes we have to wash our uniforms, you have no idea how many times I've heard some kid say "do.... laundry? I don't know how" ask someone at home to show you how to do laundry and then do your own as often as you need to. There's nothing sadder than going to college and not knowing how to do your own laundry.

How to Create a Budget - this is essential to anyone who's going to school, or living on their own or even has a job for that matter. Budgets can be created for the week, for bi-weekly or monthly, mine are bi-weekly. Take your overall income and then write down all of your fixed expenses (all of the things you can't get away with NOT paying, and are always the same) Subtract all of your fixed expenses from your income. Then with whats left subtract anything else you usually need to buy (stuff like groceries, phone cards for a cell phone, tampons... things are necessities) and whatever your going to put towards savings. What's left from all of that is your expendable cash. Try to stick to it.

How to Shop Smart - this ties in with creating a budget. If you are tight on cash most of the time, spending the least amount of money is really important. When you go shopping make a list, and stick to it. When you're taking the products off the shelves check and see if there's something similar (or even the exact same) that's on sale, or less money.

How to Pay Bills - obviously this is important, and instructions come with your bills when you get them.

How to Sew - this is important to know if you need to put a button back on a jacket or something, that way you don't have to pay money to get it fixed, always have a small sewing kit in your house somewhere.

How to Fix Things - this can go for anything, if there's a problem at least know how to figure out if you can fix it yourself or if you have to call a professional. Take some courses on different things if they're available and you can afford it.

How to say NO - so many people get stuck in terrible situations because they can't say no. Learning to say no when someone asks you to do something can help you save money and keep your life stress free by keeping your workload light.

Proper Inverview Etiquette - this is important when applying for a job, there are things that are just plain polite when you go for an interview that you wouldn't think of when your anyplace else.

Learn about your Car - if you have one, you should get to know it, where things are under the hood, what weird sounds or problems would be caused by, who knows you might be able to save yourself a lot of money by fixing it yourself.

Self Defense - I can not stress this enough, especially for women, if there's one offered near you, take a self-defense course and go through the practice fight, you won't realize how real a situation could be unless you go through the practice fight.

How to Decorate a Home - I don't mean colours and materials and stuff, but where furniture would look good, what kind of furniture you need in a home, make sure your house looks presentable, and always try to make it look as great as it can.

How to Accept Kindness - if someone tries to help you, and you didn't want their help, at least tell them politely. Don't get snappy, you'll only make them feel bad for doing something nice.

30 Things Every Woman Should Have Before She's 30

Ever wonder what exactly are the essentials in life? What should every woman own? Here's a list of 30 things I think every woman should own before she's 30:

1. A great bag - something big that can be paired with any outfit.

2. A classy/chic wallet - every woman thinks the perfect bag is all she needs, but wallets are just as important.

3. A passport - travelling is one of the most important things anyone can do, what better way to learn than to experience things first-hand?

4. A set of luggage that she's not embarassed to be seen with - yes, we've all been there, carring around an old set of luggage that should have been thrown out a long time ago.

5. An umbrella - very important, you don't want to get stuck outside on a rainy day without one, make sure it's small enough you can fit it in your bag, and make sure it's something you'll want to be seen carrying (not a ducky umbrella).

6. A good set of dishes - dishes are important, no need to say why, but a good set of dishes won't break or chip, and they'll go with any decor.

7. At least one piece of furniture that hasn't been previously owned - this is more for a sense of independance than anything else, to have at least one thing you can say "I bought that, and I earned it" and be able to use it on a daily basis is an accomplishment.

8. The 7 pairs of essential shoes- these consist of a 2 inch heel (a pair that can be worn with any outfit), a ballet flat (comfy, and chic), a high heel (something eye-catching), a chic boot (ankle, calf, knee, or above the knee all work), a sneaker (one that will be for every day use, not the gym), an all-weather boot (something warm that can be worn in snow, or rain), and a running show for working out.

9. A workout routine - everyone should have one, not just women, it is the basis of a healthy lifestyle.

10. A set of cook/bakeware - every woman should have what is needed to cook a meal and bake a dessert, weather it's just for herself, or for guests.

11. Makeup - this includes foundation, cover-up, bronzer, translucent powder, eyeliner, eye-shadow, mascara, lipgloss, lipstick, blush, and makeup remover)

12. Skincare products for her skin type - this includes at least these products: expholiant, cleanser, and a moisturizer (everyone needs to use moisturizer, even women with oily skin types, if your skin is oliy, moisturize only in the morning, then just wash your face at night, if it looks kind of dry after washing give it a bit of moisturizer, dry and combination skin types should moisturize twice daily, in the morning and at night)

13. A watch - this is important, yes you can use a cell phone to get the time, but think of a watch as wrist candy, it's fashionable and useful! Be sure to get one that goes with any outfit (think silver, black, white, grey)

14. A favourite accessory - every woman should have one, be it a necklace, a pair of earrings, a bracelet, a bag, a headband, anything.

15. A pair of oven mitts - no a dish towel will not do the trick, they'll be ruined before you know it.

16. A favourite outfit - it doesn't have to be a specific article of clothing, it could just be jeans and a tshirt, or a skirt and blouse.

17. A screwdriver set - having the ability to fix something if it needs fixing and not having to rely on a mans help makes you independant.

24. A resume that doesn't have any padding - being able to say everything on your resume is 100% truth and isn't exaggerated to make you look better is a huge accomplishment.

26. A bank account only she has access to - nothing is worse than having your mom check up on everything your doing by getting into your bank account.

Welcome

Thanks to anyone who is reading, I'm going to take this opportunity to introduce myself.
My name is Cassy, I'm a customer service rep at a local botique/interior decorating store. I currently attend high school and am working towards a career in baking.

As far as family goes mine is quite large. There's my parents, and my yonger sister. On my mom's side there's 2 aunts and 2 uncles (one passed away before I was born though). On my dad's side there's 2 aunts and 1 uncle. Each of my aunts and uncles have a least one child. My cousin lives with me, as well as my boyfriend.

I am a student with a high average and am hoping to keep it that way. I turn 18 this year. I take life one day at a time, learning something new every day. I dread Wednesdays, and work as well (but who doesn't).

For anyone who's worried about it, my posts will not be about me or my life, this particular post is to let people know who I am, and give my blog a kick off, it is most certainly not a day-to-day telling of my life (that annoys the hell out of me, who wants to read about some random persons life?). Some of my blogs may be about my current baking adventures (all including recipes and a picture of what I made). Some may be about beauty, life in general, relationships... whatever I feel like writing about that day.

Feel free to leave comments (preferably not nasty ones, all of my comments are going to be reviewed and I prefer to not have to read cruel comments). I'm open to any suggestions, tips, or spelling corrections. :)
